Herbed Goat Cheese Stuffed Pork Chop

BLEND No.40 CREATIVE RECIPE

As you have guessed, I am constantly in search of new ways to develop and infuse bold flavors into my culinary creations. Of equal importance, is flavor creation that is simple, fast and easy. My Blends were developed for exactly this reason – combine my unique blends of herbs and spices with olive oil and apply to a protein, vegetable or starch and cook. It’s just that easy! What my Blend No.40 does to this pork is almost unbelievable, the addition of fresh thyme and mint perfectly complements the blend with additional bright herbaceous notes. I promise you will be thrilled with the recipe!
BLEND FLAVOR PROFILE
Black Pepper, Coriander, Onion, Paprika, Chili Powder, Red Chili Flakes, Thyme, Parsley, Lime, Sea Salt, Herbs & Spices

Serves 8

RECIPE INGREDIENTS

  1. 1pk Pork Rack Blend No.40                     
  2.  ¾C Olive oil _More if needed            
  3. 1 Pork Rack, Frenched, Cut into Chops
  4. 4T Olive Oil, For cooking
  5. 1C Goat Cheese
  6. IT Parsley, Fresh Chopped
  7. IT Mint, Fresh Chopped
  8. IT Thyme, Fresh Chopped
  9. ¼t Sea Salt, Freshly Ground
  10. 1t Pepper, Freshly Ground

KITCHEN ESSENTIALS

  • Large Cast Iron Grill Pan
  • Glass Jar (Preferably with Screw Lid)

TIPS

  • For even flavor in every bite mix entire package with oil
  • Use this Blend for a variety of pork cuts, lamb, poultry, and meaty fish or as herbed oil
  • Add extra salt and pepper to your taste if desired

PREP

  1. Mix entire package of Blend No.40 with oil in a mixing bowl, set aside
  2. Mix goat cheese, parsley, mint, thyme, salt and pepper, set aside
  3. Place pork chops on a baking tray, prick meat with a fork
  4. Make a slit into each chop from the side, stuff with herbed goat cheese, push opening to close
  5. Pour some of the Blend mixture over rack without touching the meat
  6. Rub the Blend mixture into the meat well with your hands
  7. Add more of Blend mixture if needed for stronger flavor, optional
  8. Cover and refrigerate until ready to cook, preferably 6-8 hours
  9. Refrigerate excess Blend mixture, if any, in a jar with lid closed for later use

DIRECTIONS

  1. Preheat your oven to 375˚F
  2. Bring chops to room temperature
  3. Heat oil in grill pan over medium high heat
  4. Place each chop onto grill pan, sear about 2 minutes or until lightly charred
  5. Turn over to the bone side, sear 2 minutes transfer pan to preheated oven
  6. Cook until 5˚F¹ below your desired internal temperature is reached²
  7. Transfer pork chops to your cutting board, let it rest for few minutes
  8. Top with more goat cheese, mint sauce  or another chutney or relish
  9. Serve with your choice of sides

NOTE

¹You would want to take the meat out of the oven before your desired internal temperature is reached as meat continues to cook while resting

²145˚F = Recommended Internal Temperature
