Zucchini Corn Soup

BLEND No.75 CREATIVE RECIPE

Once my life was lived in the fast lane of corporate America. Believe me, I know what it's like to come home and just want something delicious and soul-satisfying with minimal effort. Here I offer you a recipe with just a few ingredients, packed with flavor that takes minutes to make. If you just happened to have some fully-cooked Argentinian Red Shrimp on hand, this light and healthy soup becomes a complete meal. Oh! Wait! BLEND FLAVOR PROFILE
Dill, Parsley, Leek, Basil, Salt, Pepper, Herbs & Spices

Serves 6 - 8

RECIPE INGREDIENTS

  1. 2T  HomeiraStyle Blend No.75, Already mixed with olive oil (see Original Signature Recipe)
  2. ½C Onion, Finely Chopped
  3. 2T  Olive Oil
  4. 2t   Curry powder
  5. 1C  Chicken Broth, More if needed
  6. 5     Zucchini, Cut in Pieces 
  7. 2C  Corn, Canned
  8. D    Sea Salt and pepper, Freshly Ground
  9. ¼C  Pomegranate seeds, For Garnish (Optional)
  10. Mint Tips, For Garnish (Optional)                  

KITCHEN ESSENTIALS

  • Medium Sized Pot
  • Immersion Hand Blender

DIRECTION

  1. Heat oil in pot, add onion and sauté until translucent
  2. Add curry powder, sauté for 1 minute
  3. Stir in Blend No.75 mixture
  4. Add Zucchini and sauté for 2 minutes
  5. Add broth and cook for 2-3 minutes
  6. Add Corn and cook for 1-2 minutes
  7. Using a hand blender, coarsely blend the zucchini mixture in the pot, do not over blend
  8. Garnish with pomegranate and mint and serve
