GET CREATIVE RECIPE

This raw salad of gorgeous fresh spring asparagus is thinly sliced by hand for this salad. It's quite easy and takes just minutes. The herbal notes of sumac, thyme, mint, parsley, and dried lime combine with fresh lime juice, mint, cilantro, jalapeño and grated ginger for a bright flavorful explosion on the palate.


Serves 4 - 6

INGREDIENTS

  1. 1 tablespoon Blend No.40
  2. 2 tablespoons rice vinegar
  3. 1 teaspoon grated ginger
  4. 1 teaspoon minced garlic
  5. 2 teaspoons light brown sugar
  6. 1 jalapeño pepper, seeded and finely diced
  7. 1 tablespoon fresh mint, finely chopped
  8. 2 teaspoons toasted sesame oil
  9. 1 ½ pounds fat asparagus

  10. 1 teaspoon lime juice
  11. ½ teaspoon grated lime zest
  12. Mint leaves, for garnish
  13. Cilantro sprigs, for garnish
  14. 1 tablespoon toasted sesame seeds for garnish
  15. ½ teaspoon ground sumac for garnish

INSTRUCTIONS

  1. In a small bowl, combine Blend No.40, lime juice, rice vinegar, ginger, garlic, chopped mint, brown sugar and jalapeño. Stir in the sesame oil to make a vinaigrette. Adjust seasoning to taste with salt and pepper.
  2. Remove the woody bottoms of the asparagus. Using a vegetable peeler, start just below the tips and peel down towards the bottom into long thin slices like fettuccine pasta.
  3. Place asparagus slices and tips in bowl, add the vinaigrette and toss to coat well.
  4. Arrange on a serving plate and garnish with the fresh mint and cilantro leaves.
  5. Sprinkle with sesame seeds and sumac before serving.
