Simple Roast Cauliflower

This dish is magical! My Blend No.60 transforms ordinary cauliflower, a touch of bacon, parmesan and panko bread crumbs into a sublimely delicious recipe. High in protein and potassium, cauliflower shines with this simple preparation. Crunchy, nutty, meaty and delicious, this is a perfect fall and holiday side dish.

RECIPE INGREDIENTS

  1. 2lb            Cauliflower, cut into steaks
  2. 3T             Blend No.60, Already mixed with Olive oil
                     from Refrigerator
  3. 2T             HomeiraStyle Blend No.75, Already mixed with
                     Olive Oil from Refrigerator
  4. 2T             Olive Oil
  5. ¼C             Bacon, Cooked and Julienned
  6. 5T             Fresh parsley, Chopped
  7. 6T             Panko
  8. D              Sea Salt and Pepper,Freshly Ground_ Optional
  9. 1T             Olive Oil, for Sautéing Parsley and Panko
  10. 2T             Parmesan Cheese, to Grate over Cauliflower
  11. ¼C            Pomegranate, Seeded, Optional
  12. ¼C            Almond, Toasted, Optional 

TIPS

Omit the bacon for a delicious vegetarian dish

PREP

  1. In a mixing bowl, add cauliflower pieces, Blend No.60, Blend No.75 and oil and toss to mix
  2. Transfer cauliflower mixture to a baking tray
  3. Arrange them in a single layer for even cooking, set aside
  4. Combine parsley, panko, salt and pepper
  5. Sauté parsley mixture in a wok for few seconds, do not overcook, set aside

DIRECTIONS

  1. Preheat oven to 400˚F
  2. Transfer cauliflower to oven middle rack
  3. Roast for 10 - 12 minutes
  4. Remove cauliflower from oven, grate cheese over it evenly, sprinkle parsley mixture, add bacon and transfer back to oven, roast for 10 minutes or until golden brown
  5. Remove from oven, sprinkle pomegranate and serve immediately
