Grilled Cauliflower Steak No.40

BLEND No.40 CREATIVE RECIPE

One of my favorite sayings states: “Out of constraint comes creativity”. I have number of vegetarian friends, so I am always looking to create something dazzling, delicious and nutritious with fresh produce. My friend, Katherine, an avid user of my Blends loves Blend No.40 and uses it with her vegetarian dishes, particularly legumes. This dish is for her.

BLEND FLAVOR PROFILE
Black Pepper, Coriander, Onion, Paprika, Chili Powder, Red Chili Flakes, Thyme, Parsley, Lime, Sea Salt, Herbs & Spices

Serves 6 – 8

RECIPE INGREDIENTS

  1. 1pk Blend No.40                             
  2. ¾C Light Olive Oil
  3.  2 Heads of Cauliflowers, Cut into 1¼” Steaks  
  4. 2C Persian Strained Yogurt
  5. ½C Sour Cream
  6. 3T Blend No.75 mixture from refrigerator  ( See Signature Recipe )
  7. 1T Lemon Zest
  8. 1T Lemon Juice_ Freshly Squeezed
  9. D Sea Salt and Freshly Ground Pepper _ to taste
  10. 1C Pomegranate Seeds
  11. 1C Mint Leaves Tips

KITCHEN ESSENTIALS

  • Large Grill or Sauté Pan

TIPS

  • For even flavor in every bite, mix entire Blend package at once

PREP

  1. Mix entire package of Blend No.40 with oil in a mixing bowl, set aside for the flavors to infuse
  2. Place cauliflower steaks on a baking tray
  3. Pour some of the Blend mixture over cauliflower steaks without touching them
  4. Spread out the Blend mixture evenly over the surface of cauliflower steaks with your hands
  5. Cover and refrigerate for 15 minutes only.
  6. Mix yogurt, sour cream, Blend mixture No.75, lemon zest and juice, salt and pepper, set aside

DIRECTIONS

  1. Heat oil in sauté pan over medium high heat
  2. Add steaks and sauté about 5 -10 minutes or until slightly browned, do not over crowd
  3. Pour some of the yogurt mixture on plate
  4. Position a steak upright
  5. Top yogurt mixture with pomegranate seeds and mint
  6. Serve with rice or legumes
