Chocolate Cake & Cappuccino Ice Cream Mousse

As I've noted before dessert is often the last thing on my mind when I plan my dinner experiences. I'm always looking for short cuts with great results, especially when it comes to sweets. Just because baking and desserts aren't among my favorites, whatever I do, must be as elegant and artful as the rest of my menu. This sweet short cut has a bold attitude and stunning visual presentation. If you have some extra chocolate cake, then you have the first ingredient on hand!
Serves 6
RECIPE INGREDIENTS
- 4C Chocolate Cake
- 3C Cappuccino Ice Cream or Your Favorite Flavour*
- 2T Coffee Liqueur
- 1t Vanilla Extract, Pure
- 2C Fresh Raspberries
- 1C Toasted Hazelnuts _ Roughly Chopped
- 3T Chocolate Confetti Topping
- 6 Chocolate Hazelnut Crème de Pirouline (Wafer Cigars)
KITCHEN ESSENTIALS
- Electric Blender or Food Processor
DIRECTIONS
- Using an electric blender or food processor,
- Blend cake, ice cream, liquor and vanilla together, do not over blend
- Divide cake mixture in 6 serving desert martini glass
- Garnish with raspberries, chopped hazelnuts, chocolate confetti and Crème de Pirouline (Wafer Cigars)
- Serve immediately
NOTE
* Make sure ice cream is hard and frozen when you blend it. Do not use soft ice cream or you will have a goopy mess!
