Chocolate Cake & Cappuccino Ice Cream Mousse

As I've noted before dessert is often the last thing on my mind when I plan my dinner experiences. I'm always looking for short cuts with great results, especially when it comes to sweets. Just because baking and desserts aren't among my favorites, whatever I do, must be as elegant and artful as the rest of my menu. This sweet short cut has a bold attitude and stunning visual presentation. If you have some extra chocolate cake, then you have the first ingredient on hand!

Serves 6


  1. 4C     Chocolate Cake             
  2. 3C     Cappuccino Ice Cream or Your Favorite Flavour*
  3. 2T     Coffee Liqueur                           
  4. 1t      Vanilla Extract, Pure
  5. 2C     Fresh Raspberries
  6. 1C     Toasted Hazelnuts _ Roughly Chopped
  7. 3T     Chocolate Confetti Topping
  8. 6       Chocolate Hazelnut Crème de Pirouline (Wafer Cigars)


  • Electric Blender or Food Processor


  1. Using an electric blender or food processor,
  2. Blend cake, ice cream, liquor and vanilla together, do not over blend
  3. Divide cake mixture in 6 serving desert martini glass
  4. Garnish with raspberries, chopped hazelnuts, chocolate confetti and Crème de Pirouline (Wafer Cigars)
  5. Serve immediately


* Make sure ice cream is hard and frozen when you blend it.  Do not use soft ice cream or you will have a goopy mess!
