Gluten Free "Black Bean" Pasta Salad

BLEND No.75 & No.80 CREATIVE RECIPE

I never see a reason to sacrifice flavor or texture and wonder how is it possible to make gluten free pasta that has the same delicious bite as wheat pasta. I was completely surprised to discover this penne pasta made from black beans is perfectly chewy and takes seasoning incredibly well. This beautiful and delicious salad has it all, from the right bite to the pasta, to my Blend No.80 combined with creamy, pungent and crunch of the of the vegetables and cheese, all brought together with my No.75 vinaigrette. This simple healthy salad makse a delightful course to any dining experience.

Black Pepper, Thyme, Oregano, Onion, Parsley, Basil, Leek, Lime, Sea Salt, Herbs & Spices

Serves 4 - 6

RECIPE INGREDIENTS

Dressing

  1. ¼C        HomeiraStyle Blend No.75, Already mixed with olive oil (see Original Signature Recipe)
  2. ½C        Vinaigrette Dressing, Store Bought
  3. 1T         Lemon Zest
  4. 2T         Lemon Juice, Freshly squeezed

Salad

  1.  1lb            “Black Bean” Pasta,  Gluten Free
  2.  3T              HomeiraStyle Blend No.80, Already mixed with olive oil, (see Original Signature Recipe)
  3.  3C              Frisee Lettuce
  4.  3C              Persian Cucumber, Diced
  5.  3C              Cherry Tomatoes, Halved
  6.  1C              Mint Leaves, Julienned
  7.  1C              Goat Cheese, Crumbled
  8.  1C              Edible Flowers, For Garnish (Optional)

KITCHEN ESSENTIALS

  • Wok


DIRECTION

  1. In a mixing bowl, add Blend No.75 mixture, Vinaigrette, lemon zest, lemon juice
  2. Mix well with a fork or wire whisk, set aside for the flavors to infuse
  3. Add pasta to 4 quarts salted boiling water
  4. Cook uncovered for 4-5 minutes, taste to make sure it is al dente, drain over colander
  5. Heat wok over medium high heat
  6. Add Blend No.80 mixture, toss to sauté for 20-30 seconds
  7. Add pasta and toss to mix and cook for 1-2 minutes or until cooked to your liking
  8. Set pasta mixture aside to cool down to room temperature
  9. In a mixing bowl, add pasta mixture, lettuce, cucumber, tomatoes, and mint
  10. Add dressing to bowl, toss to evenly coat
  11. Divide onto individual plates      
  12. Top with cheese
  13. Garnish with edible flowers and serve
